I met Jon through my brother Cory when I was chasing down how to make sourdough bread at home. I knew that I came to the right place after he pointed to a picture on the wall of his sourdough starter under a microscope, he nicknamed “mad max.” When he says that discovering and learning is more of a compulsion than a passion, I tend to believe him.

What does passion mean to you?
Passion is what gets you through your day, and what makes your day worthwhile. It’s something that almost ruins your life and relationships. It’s not a passion if you aren't willing to sacrifice for it. And in relationships, you have to put up with things the other is passionate about. Essentially you are dating their passion.
What is your most significant and meaningful passion in life?
Discovering and learning, I like to get super into something and I don't have mild interests. Finding videos, teaching yourself something new, and the parity between feeling lost and figuring things out is very rewarding.
Bread was the same framework for this. In a business context, bread will get me through the bad days. Knowing I can make sourdough for a living is a good pay off skill, and that everyone in the shop is eating something you made that day.
How has your passion changed over time?
At first I liked the idea and image of being a baker since people assume you are being passionate. With bread, its gone from being romantic with flour everywhere, to making something I take pride in.
I enjoy how practical it has become, and I don’t waste dough anymore. The bread used to look beautiful, but not as many sandwiches came out of it. The passion for bread is still there, it has matured and loaves look ten times better.
What thoughts or emotion does your passion evoke from others?
Curiosity, especially since people can’t believe I am self taught. If you’re obsessive about learning like me, you can overcome not having a teacher. Passion is a version of wealth that you have.
Don’t be embarrassed to be passionate about something. Fighter aircraft of WW1 in high school that wasn’t cool; But it was less about the subject and more about nurturing passion in general.
